Ingredients

Scale

Dry Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon ground nutmeg
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Wet Ingredients

  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup classic creamy eggnog

Instructions

  1. Preheat and Prep: Heat your oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone mats to prevent sticking and ensure even baking.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking powder, ground nutmeg, cinnamon, and salt until evenly combined. These warm spices will set the foundation for that classic eggnog taste.
  3. Cream Butter and Sugars: Using a stand mixer or hand mixer, beat the softened butter with granulated and brown sugars until light and fluffy—about 3-4 minutes. This step is key for achieving that soft, chewy texture.
  4. Add Wet Ingredients: Beat in the egg, vanilla extract, and eggnog until fully combined. The eggnog adds moisture and that unmistakable creamy flavor.
  5. Combine Wet and Dry: Gradually mix the dry ingredients into the wet, being careful not to overmix. Stir just until the dough comes together; overworking the dough can make your cookies tough.
  6. Scoop and Bake: Drop tablespoon-sized balls of dough about 2 inches apart on the prepared baking sheets. Bake for 10 to 12 minutes or until the edges are golden but the centers remain soft. Cool cookies on the pan for 5 minutes before transferring to a wire rack.

Notes

  • Use freshly ground nutmeg and cinnamon for the best flavor.
  • Make sure butter is softened, not melted, for ideal texture.
  • Do not overbake; remove cookies when edges start to turn golden to keep them soft inside.
  • Use classic creamy eggnog, avoiding low-fat or watery varieties for best moisture and taste.
  • Optionally chill dough for 30 minutes for thicker cookies.
