Instructions

  1. Prepare Your Ingredients: Preheat the oven to 375°F (190°C). Crumble the feta cheese into a bowl. If using, finely chop the nuts and herbs. Melt the butter or have olive oil ready to brush onto the fillo sheets.
  2. Assemble the Bites: Lay one sheet of fillo on a clean surface and brush lightly with melted butter or olive oil. Layer one or two more sheets on top, brushing each sheet between layers. Cut the layered sheets into small squares or rectangles. Place a small spoonful of crumbled feta cheese in the center of each piece. Sprinkle herbs and nuts if using, then carefully fold or roll the pastry to enclose the filling.
  3. Bake to Golden Perfection: Arrange the assembled bites on a baking tray lined with parchment paper. Brush the tops with a little more butter or oil to encourage a golden color. Bake for 12-15 minutes or until the bites are crisp and golden brown.
  4. Drizzle with Honey: After removing from the oven and allowing the bites to cool slightly, drizzle each one generously with honey to add sweetness and a beautiful shine.
