Ingredients

Scale

Base

  • 4 thin flatbreads or pita rounds

Feta Mixture

  • 1 cup crumbled feta cheese
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced or 1 teaspoon garlic powder
  • 2 tablespoons fresh herbs (parsley, dill, or mint), finely chopped
  • Salt, to taste
  • Black pepper, to taste

Optional Toppings

  • 1/2 cup cherry tomatoes, halved
  • Thin slices of bell pepper or spinach (for veggie boost)
  • Chili flakes or hot sauce (for a spicy twist)
  • Crushed walnuts or pine nuts (for a nutty addition)

Instructions

  1. Prepare the Ingredients: Crumble the feta cheese into a mixing bowl and finely chop the fresh herbs and garlic. If using cherry tomatoes, halve them and set aside.
  2. Season the Feta Mixture: Add minced garlic, chopped herbs, a pinch of salt, and black pepper to the feta. Drizzle olive oil over the mixture and gently combine to blend the flavors.
  3. Assemble the Flatbreads: Lay flatbreads or pita rounds on a baking sheet and spread the feta mixture evenly on top. Add cherry tomatoes and any additional optional toppings as desired.
  4. Bake Until Crisp: Preheat the oven to 375°F (190°C). Bake the flatbreads for 10 to 15 minutes, until the edges are golden and crisp and the cheese begins to brown slightly.
  5. Serve Warm: Remove from the oven and allow to cool slightly before slicing and serving. This helps the cheese topping set and makes the flatbreads easier to handle.

Notes

  • Use authentic Greek feta for a richer, creamier flavor that melts beautifully.
  • Thin flatbreads or pita work best to achieve a crispy base.
  • Spread toppings thinly to ensure even cooking and avoid soggy flatbreads.
  • For extra crispiness, broil the flatbreads for 1-2 minutes at the end of baking.
  • Use fresh herbs like parsley, dill, or mint for brightness and optimal flavor.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Flatbreads can be frozen individually wrapped for up to one month.
  • Reheat in a toaster oven or oven at 350°F (175°C) for 5-7 minutes to retain crispness, avoid microwaving.
  • To make vegan, use a plant-based feta alternative and an olive oil-based yogurt sauce.
  • For gluten-free options, use gluten-free flatbreads or naan.
