Ingredients

Scale

Protein and Base

  • 1 lb chicken breast, sliced thin
  • 3 cups cooked jasmine rice

Aromatics

  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • 2 green onions, thinly sliced

Firecracker Sauce

  • 3 tbsp soy sauce
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tsp crushed red pepper flakes (adjust to taste)

Other

  • 1 tbsp cooking oil (for skillet)

Instructions

  1. Prepare the Ingredients: Slice the chicken breast into thin strips for even and quick cooking. Mince the garlic and ginger finely, and chop the green onions into thin rounds. Measure out the soy sauce, honey, rice vinegar, and crushed red pepper flakes for the sauce.
  2. Cook the Chicken: Heat 1 tablespoon of oil in a skillet over medium-high heat. Add the sliced chicken and cook for 5-7 minutes until golden and cooked through. Remove the chicken from the skillet and set aside to keep it juicy and tender.
  3. Make the Firecracker Sauce: In the same skillet, add the minced garlic and ginger and sauté until fragrant, about 30 seconds. Pour in soy sauce, honey, rice vinegar, and crushed red pepper flakes. Stir and simmer gently for 2-3 minutes until the sauce is combined and slightly thickened.
  4. Combine and Glaze: Return the cooked chicken to the skillet, tossing it vigorously to coat every piece with the firecracker sauce. Heat through for about a minute so the flavors meld together beautifully.
  5. Serve over Rice: Fluff the cooked jasmine rice and plate it generously. Spoon the saucy firecracker chicken on top, garnish with chopped green onions, and serve immediately.

Notes

  • Marinate briefly: Toss chicken in a tablespoon of soy sauce before cooking to deepen flavor.
  • Control the heat: Add crushed red pepper flakes gradually to adjust spiciness.
  • Use high heat: Cook chicken quickly over medium-high heat to lock in juiciness and get a nice sear.
  • Don’t overcook garlic: Add it towards the end of sautéing to avoid bitterness.
  • Toast rice grains: Optionally toast rice in a bit of oil before cooking for nuttier flavor.
