Ingredients

Scale

Protein

  • 4 boneless, skinless chicken breasts or thighs

Vegetables and Aromatics

  • 3 large yellow onions, thinly sliced
  • 3 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves or 1/2 teaspoon dried thyme

Liquids & Fats

  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 cup beef broth (homemade or high-quality preferred)

Cheese

  • 1 1/2 cups grated Gruyère or Swiss cheese

Bread (Optional)

  • Thin slices of baguette or crusty bread for layering or serving

Seasonings

  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Caramelize the onions: Thinly slice the yellow onions, then cook them slowly over medium-low heat in a pan with butter and olive oil. Stir occasionally, allowing the onions to soften and turn a deep golden brown, which takes about 25-30 minutes to develop their sweet, rich flavor.
  2. Prepare the chicken: While the onions caramelize, season the chicken breasts or thighs generously with salt, pepper, and thyme. Heat a separate pan and lightly sear the chicken over medium-high heat until a golden crust forms, then set the chicken aside.
  3. Assemble the bake: Grease a baking dish and spread half of the caramelized onions evenly across the bottom. Place the seared chicken pieces on top of the onions. Add the remaining caramelized onions and minced garlic on top of the chicken to layer the flavors.
  4. Add broth and cheese: Pour the beef broth evenly over the chicken and onions to keep the bake moist. Generously sprinkle grated Gruyère or Swiss cheese over the top for a melty, golden crust.
  5. Bake until bubbly and golden: Cover the dish with foil and bake in a preheated oven at 375°F (190°C) for 25 minutes. Remove the foil and bake uncovered for an additional 10 minutes, allowing the cheese to brown and caramelize perfectly.

Notes

  • Patience with onions is key: cook them low and slow to extract the best flavor.
  • Use quality beef broth, homemade if possible, for the richest taste.
  • Allow chicken to come to room temperature before searing to ensure even cooking.
  • Gruyère cheese melts smoothly and adds a perfect nutty flavor to the dish.
  • Let the bake rest for 5 minutes after removing from the oven for the juices to redistribute.
