Scale

Main Ingredients

  • 4 fresh fish fillets (cod, tilapia, or halibut), about 6 ounces each
  • 4 garlic cloves, minced
  • 4 tablespoons unsalted butter, melted
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons fresh parsley, chopped
  • Salt, to taste
  • Black pepper, to taste
  • 2 tablespoons olive oil (for brushing the grill)

Instructions

  1. Prepare the Garlic Butter: Melt the unsalted butter in a small saucepan over low heat. Stir in the minced garlic, fresh lemon juice, and chopped parsley. Allow the mixture to infuse for a few minutes while you prepare the fish.
  2. Preheat the Grill: Heat your grill to medium-high. Lightly brush the grill grates with olive oil to prevent sticking. If using a grill pan indoors, heat it over medium-high heat with a touch of olive oil.
  3. Season the Fish: Pat the fish fillets dry with paper towels. Season both sides generously with salt and black pepper to enhance the natural fish flavors.
  4. Grill the Fish: Place the fillets on the grill and cook for 3 to 5 minutes per side (adjust based on thickness). While grilling, brush the fish occasionally with the garlic butter mixture. The fish is done when it develops a nice char, becomes opaque, and flakes easily with a fork.
  5. Serve Immediately: Remove the fish from the grill and spoon additional garlic butter over the top for extra moisture and flavor. Garnish with lemon wedges and fresh herbs before serving.

Notes

  • Use fresh fish fillets for the best flavor and texture.
  • Avoid overcooking the fish to keep it moist and tender; it should flake easily when done.
  • Prepare the garlic butter ahead of time to allow flavors to meld.
  • Oil the grill grates well to prevent the fish from sticking and breaking apart.
  • Let the fish rest for a couple of minutes after grilling to redistribute the juices.
