Ingredients

Scale

Shrimp Scampi

  • 1 lb medium-sized shrimp, peeled and deveined (fresh or thawed)
  • 4 tablespoons butter
  • 4 cloves garlic, minced
  • 1/4 cup white wine or broth
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 2 tablespoons chopped fresh parsley
  • Salt and pepper, to taste

Lasagna

  • 912 lasagna noodles (no-boil or cooked according to package)
  • 1 1/2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1 cup ricotta cheese or heavy cream
  • 1/4 teaspoon ground nutmeg
  • Salt and pepper, to taste
  • Fresh basil leaves (optional, for layering and garnish)

Instructions

  1. Prepare the Shrimp Scampi: Melt butter in a skillet over medium heat. Add minced garlic and sauté until fragrant, about 1-2 minutes. Add the shrimp and cook until pink and opaque, about 3-4 minutes. Pour in white wine or broth and squeeze fresh lemon juice over the shrimp, stirring to create a vibrant sauce. Season with salt, pepper, and sprinkle chopped parsley before removing from heat.
  2. Cook the Lasagna Noodles: If using traditional noodles, cook according to package instructions until al dente. Drain and lay flat on a clean surface or baking sheet to prevent sticking. If using no-boil noodles, ensure they are ready to layer as directed.
  3. Prepare the Cheese Mixture: In a bowl, combine shredded mozzarella, grated Parmesan, and ricotta or heavy cream. Season lightly with salt, pepper, and a pinch of nutmeg, mixing until smooth and creamy.
  4. Assemble the Lasagna: Preheat the oven to 375°F (190°C). In a baking dish, spread a thin layer of garlic butter sauce from the shrimp skillet. Add a layer of noodles, then spread some cheese mixture evenly. Top with a generous layer of the cooked shrimp and spoon over some sauce. Repeat layers, finishing with noodles and a generous topping of cheese mixture for a golden crust.
  5. Bake to Perfection: Cover the dish with foil and bake for 30 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese on top is bubbly and golden brown. Let the lasagna rest for at least 10 minutes before slicing and serving.

Notes

  • Use fresh shrimp for the best texture and flavor in your lasagna.
  • Do not overcook the shrimp; cook just until they turn pink to avoid rubbery texture.
  • Distribute shrimp and cheese layers evenly for a balanced flavor in every bite.
  • Let the lasagna rest after baking to allow it to set and become easier to slice.
  • Choose high-quality butter to enhance the rich scampi flavor of the dish.
