Ingredients

Scale

Main Ingredients

  • 4 garlic cloves, freshly minced
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour (or gluten-free flour blend for gluten-free option)
  • 1 ½ cups whole milk or heavy cream
  • ½ cup grated Parmesan cheese
  • Salt, to taste
  • Freshly ground black pepper, to taste

Optional Herbs

  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon Italian seasoning or fresh basil or thyme (optional)

Variations

  • For vegan version: substitute butter with 3 tablespoons olive oil and milk with 1 ½ cups oat milk or other plant-based milk
  • For spicy kick: add ¼ teaspoon crushed red pepper flakes or a dash of cayenne pepper
  • Cheese alternatives: use Pecorino Romano or Asiago cheese instead of Parmesan

Instructions

  1. Sauté the Garlic: Melt the butter in a saucepan over medium heat. Add the freshly minced garlic and sauté gently for 1–2 minutes until fragrant but not browned, unlocking a vibrant garlic flavor.
  2. Make the Roux: Sprinkle the all-purpose flour over the melted butter and garlic while stirring constantly. Cook for another 1–2 minutes to eliminate the raw flour taste and thicken the sauce.
  3. Whisk in the Dairy: Gradually pour in the whole milk or heavy cream while whisking steadily to avoid lumps. Continue whisking over medium-low heat for 3–5 minutes until the sauce thickens smoothly.
  4. Add Cheese and Seasoning: Stir in the grated Parmesan cheese until melted and well combined. Season with salt and freshly ground black pepper to taste. Add any optional herbs for extra flavor at this stage.
  5. Finish and Cool Slightly: Remove the saucepan from heat and let the sauce cool slightly. It will continue to thicken as it cools, making it perfect for spreading on pizza dough.

Notes

  • Use fresh garlic for the best flavor; pre-minced garlic lacks brightness.
  • Cook garlic over medium heat slowly to avoid burning and bitterness.
  • Whisk constantly to ensure a smooth, lump-free sauce.
  • Freshly grate Parmesan cheese for better melting and cleaner flavor.
  • If the sauce is too thick, add a splash more milk to adjust consistency.
  • Store leftover sauce in an airtight container in the refrigerator for up to 3 days.
  • Freeze in airtight containers for up to 2 months, thaw overnight before reheating.
  • Reheat gently over low heat, stirring frequently; add milk or cream if too thick.
