Gochujang Glazed Chicken Thighs

Gochujang Glazed Chicken Thighs

Gochujang Glazed Chicken Thighs are a flavorful Korean-inspired dish featuring tender, juicy chicken thighs coated in a savory, sweet, and spicy gochujang glaze. Perfectly balanced with umami, heat, and a touch of sweetness, this recipe is simple to prepare and ideal for casual dinners, meal prepping, or entertaining guests.

Ingredients

Scale

Chicken

  • 46 skin-on, bone-in chicken thighs

Marinade / Glaze

  • 3 tablespoons gochujang paste
  • 2 tablespoons soy sauce (or tamari/coconut aminos for gluten-free)
  • 12 tablespoons honey or brown sugar
  • 3 cloves garlic, minced
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil

Garnishes

  • 2 green onions, chopped
  • 1 tablespoon toasted sesame seeds
  • Optional: thinly sliced chilies, extra sesame oil for drizzling

Instructions

  1. Prepare the Marinade: In a bowl, mix gochujang paste, soy sauce, honey or brown sugar, minced garlic, rice vinegar, and sesame oil until smooth and well combined to create the flavorful glaze that will infuse the chicken.
  2. Marinate the Chicken: Place the chicken thighs in a shallow dish or ziplock bag and pour the marinade over them, ensuring they are fully coated. Let the chicken marinate for at least 30 minutes, or up to 2 hours for deeper flavor.
  3. Preheat the Oven or Grill: If baking, preheat your oven to 400°F (200°C). If grilling, heat your grill to medium-high. Both methods develop a beautiful glaze and crispy edges.
  4. Cook the Chicken: Arrange the chicken thighs skin-side up on a baking sheet or grill. Bake for 25-30 minutes or grill for about 6-7 minutes per side, basting occasionally with leftover marinade, until fully cooked and caramelized.
  5. Garnish and Serve: Sprinkle chopped green onions and sesame seeds on top just before serving to add freshness and texture. Optionally, drizzle with extra sesame oil or add sliced chilies for additional heat and color.

Notes

  • Pat the chicken dry before marinating to achieve crispier skin.
  • Do not skip marinating; even 30 minutes significantly enhances flavor.
  • Use a meat thermometer to ensure internal temperature reaches 165°F (74°C) for safe consumption.
  • Baste with extra glaze during cooking for added moisture and shine.
  • Let the chicken rest 5 minutes after cooking to lock in juices.
