Instructions

  1. Prep the Chicken and Potatoes: Preheat oven to 400°F (200°C). Rinse and pat dry the chicken thighs, then season generously with salt, pepper, and half of the minced garlic. Peel and cut the potatoes into chunks or halves. Toss them with olive oil, the remaining garlic, lemon zest, and oregano to coat evenly.
  2. Arrange Everything on a Baking Sheet: Place the seasoned chicken thighs skin-side up on a large baking sheet or roasting pan. Scatter the potatoes around the chicken in a single layer to ensure even roasting. Drizzle remaining olive oil and lemon juice over both the chicken and potatoes.
  3. Roast Until Golden and Crispy: Roast in the oven for 40-45 minutes. Halfway through, gently toss the potatoes and baste the chicken with pan juices to keep it moist. The chicken should reach an internal temperature of 165°F and the potatoes should be golden brown and tender.
  4. Rest and Serve: Remove from oven and let the chicken rest for 5 minutes to lock in juices. Squeeze fresh lemon over everything before serving. Garnish with fresh oregano or parsley and optional crumbled feta cheese if desired.
