  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons tomato paste
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt, to taste
  • Freshly ground black pepper, to taste

  • 2 cups water or broth

Instructions

  1. Prepare the Onions: Peel the large onions and cut off their tops. Carefully hollow out the centers with a small knife or spoon, creating a cavity for the stuffing while keeping the layers intact. Set aside the removed onion flesh for the filling.
  2. Make the Stuffing: Finely chop the reserved onion flesh and mix it with uncooked rice, ground meat if using, fresh parsley, dill, tomato paste, olive oil, lemon juice, salt, and pepper. Stir thoroughly to ensure an even, well-seasoned mixture.
  3. Stuff and Arrange: Gently but firmly fill each hollowed onion with the prepared stuffing. Place them upright in a deep baking dish or pot, arranging them closely so they support one another during cooking.
  4. Add Liquid and Cook: Pour water or broth into the dish until it reaches about halfway up the onions. Cover the dish tightly with foil and bake in a preheated oven at 350°F (175°C) or simmer on the stovetop until the onions are tender and the rice is fully cooked, approximately one hour.
  5. Serve Warm: Let the stuffed onions rest briefly after cooking. Drizzle with extra olive oil and lemon juice before serving for added freshness and shine.
