  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp paprika
  • Salt and pepper, to taste

Instructions

  1. Prepare the Ground Beef Mixture: Heat a skillet over medium heat and sauté the chopped onions and minced garlic until softened. Add the ground beef, breaking it apart with a spatula, and cook until browned through. Stir in chili powder, cumin, paprika, salt, and pepper; mix well. Remove from heat and set aside.
  2. Preheat Oven and Prepare Sauce: Preheat your oven to 375°F (190°C). Pour the enchilada sauce into a bowl to make it easy to spread later.
  3. Assemble the Enchiladas: Lay a tortilla flat on a clean surface. Spoon a generous amount of the beef mixture down the center, sprinkle a handful of cheese on top, then roll the tortilla tightly. Place the rolled enchilada seam-side down in a greased baking dish. Repeat with remaining tortillas and filling.
  4. Sauce and Cheese Topping: Pour the enchilada sauce evenly over all the rolled enchiladas in the baking dish. Sprinkle the remaining shredded cheese liberally over the top to ensure a golden, bubbly finish.
  5. Bake to Perfection: Bake for about 20 minutes, or until the cheese is melted, golden, and slightly crisp around the edges. Let the enchiladas rest for a few minutes before serving to help them set.
