Ingredients

Scale

Protein

  • 1 cup finely chopped or shredded cooked chicken breast

Wrappers

  • 1012 spring roll wrappers (rice paper or wheat tortillas)

Vegetables

  • 1/2 cup shredded carrots
  • 1/2 cup shredded cabbage
  • 1/2 cup bean sprouts

Flavorings

  • 2 cloves garlic, minced
  • 1 teaspoon minced fresh ginger
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil

Frying

  • Vegetable oil or canola oil for frying (about 1-2 cups as needed)

Optional Add-ins

  • 2 green onions, chopped
  • Chili flakes to taste
  • 1/4 cup chopped water chestnuts

Instructions

  1. Prepare the Filling: Finely chop or shred cooked chicken breast. Heat a pan over medium heat and sauté minced garlic and ginger in sesame oil until fragrant. Add the chicken, shredded carrots, cabbage, and bean sprouts. Season with soy sauce and cook until heated through and well combined.
  2. Soften the Wrappers: For rice paper wrappers, quickly dip each one in warm water until pliable but not too soft. For wheat wrappers, keep them covered with a damp cloth to stay flexible—no soaking needed.
  3. Assemble the Rolls: Lay a softened wrapper on a flat surface. Spoon 2-3 tablespoons of the filling near one edge. Fold in the sides neatly and roll tightly from the filled edge to form a sealed roll. Moisten the edge with a little water to secure the seal.
  4. Fry to Crispy Perfection: Heat vegetable or canola oil in a frying pan over medium-high heat. Carefully add the spring rolls and fry for 2-3 minutes per side or until golden brown and crisp. Drain on paper towels to remove excess oil.
  5. Serve and Enjoy: Let the spring rolls cool slightly, then serve warm with your favorite dipping sauces such as sweet chili sauce, soy sauce with vinegar, or peanut sauce.

Notes

  • Don’t overfill the wrappers to avoid bursting during frying.
  • Ensure the filling is not too wet to prevent soggy wrappers.
  • Maintain medium-high oil temperature; too hot will burn rolls, too low will make them greasy.
  • Roll tightly but gently to prevent air pockets and keep rolls intact.
  • Allow assembled rolls to rest for 10 minutes before frying so wrappers seal completely.
