Instructions

  1. Prepare Your Ingredients: Gather 4 cups of fresh whole milk and 2 tablespoons of plain yogurt with live active cultures or yogurt starter. Measure out any optional sweeteners and flavorings you plan to use to have everything ready before fermentation.
  2. Heat the Milk: Pour the milk into a pot and gently heat it to about 180°F (82°C) to kill unwanted bacteria and help create a smooth texture. Remove from heat and allow it to cool down to around 110°F (43°C).
  3. Add the Starter Yogurt: Mix 2 tablespoons of the starter yogurt into the cooled milk, stirring gently but thoroughly to evenly distribute the live cultures.
  4. Incubate the Mixture: Transfer the blended milk and yogurt starter into a clean container, cover it, and place it in a warm spot (100°F to 110°F) for 6 to 12 hours to ferment. Use a yogurt maker, warm oven with the light on, or a thermos to maintain consistent temperature.
  5. Blend Into a Drinkable Texture: Once fermentation is complete and the yogurt has thickened, stir or blend it until smooth and drinkable. Add filtered water if a thinner consistency is preferred.
  6. Chill and Flavor: Refrigerate the drinkable yogurt for at least a couple of hours before serving. Add sweeteners or flavor extracts as desired just before serving chilled.
