Ingredients

Pasta

  • Elbow macaroni – 2 cups (about 8 ounces)

Sauce

  • Butter – 3 tablespoons
  • All-purpose flour – 3 tablespoons (or gluten-free flour alternative)
  • Milk – 2 ½ cups (whole milk recommended, or lactose-free milk for intolerance)
  • Sharp cheddar cheese, shredded – 2 cups
  • Salt – 1 teaspoon
  • Black pepper – ½ teaspoon
  • Mustard powder (optional) – ½ teaspoon

Optional Toppings and Variations

  • Breadcrumbs – ½ cup (for baked variation)
  • Additional cheeses (mozzarella, gouda) – ½ cup mixed in or on top
  • Cayenne pepper or chopped jalapeños – to taste
  • Steamed broccoli, spinach, roasted red peppers – 1 cup mixed in

Instructions

  1. Cook the pasta: Boil the elbow macaroni in salted water until just al dente, meaning it’s cooked but still firm to the bite. Drain and set aside while preparing the sauce.
  2. Make the roux: Melt butter in a saucepan over medium heat, then whisk in the flour to form a smooth paste. Cook this mixture for about 2 minutes to eliminate the raw flour taste without browning it.
  3. Create the cheese sauce: Gradually pour in milk while whisking constantly to prevent lumps. Continue cooking and stirring until the sauce thickens. Remove from heat, then stir in the shredded sharp cheddar cheese until melted and silky smooth. Season with salt, pepper, and mustard powder if using.
  4. Combine pasta and sauce: Add the cooked pasta to the cheese sauce and gently stir until every piece is coated with the creamy cheese sauce.
  5. Serve or bake: Enjoy immediately for a creamy texture or transfer to a baking dish, top with breadcrumbs, and bake at 350°F (175°C) for 20-25 minutes until bubbly and golden for a crunchy crust.

Notes

  • Use freshly shredded cheese for the best melt and texture; pre-shredded cheese contains anti-caking agents.
  • Slowly add milk while whisking to avoid lumps and ensure a smooth sauce.
  • Do not overcook the pasta; it should be firm to soften slightly when mixed with cheese sauce.
  • Season the cheese sauce well with salt and pepper to enhance flavors.
  • Customize with mix-ins (veggies, spices) but keep balance so the creamy base shines.
