Ingredients

Scale

Protein

  • 1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces

Vegetables

  • 1 cup bell peppers, chopped
  • 1 cup broccoli florets
  • 1 cup carrots, sliced

Sauce & Seasonings

  • 3 garlic cloves, minced
  • 3 tablespoons honey
  • 3 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon olive oil or sesame oil
  • 1 teaspoon cornstarch mixed with 2 tablespoons cold water (optional, for thickening)

Instructions

  1. Prepare Your Ingredients: Slice the chicken into bite-sized pieces and chop vegetables into even, manageable sizes. Mince the garlic finely to release its full aroma.
  2. Cook the Chicken: Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add chicken pieces in a single layer and cook about 5-7 minutes, turning occasionally until golden brown and cooked through. Remove from skillet and set aside.
  3. Sauté the Vegetables: In the same skillet, add more oil if needed. Start by cooking the hardest vegetables such as carrots and broccoli stems, stirring often. After a few minutes, add softer vegetables like bell peppers. Cook until vegetables are crisp-tender and vibrant.
  4. Make the Honey Garlic Sauce: Lower heat and add minced garlic to vegetables, stirring until fragrant but not burnt. In a small bowl, mix honey and soy sauce, then pour into skillet. If a thicker sauce is desired, add the cornstarch slurry and stir until sauce thickens.
  5. Combine and Finish: Return chicken to skillet and toss everything together to coat well in the sauce. Cook an additional 1-2 minutes until heated through and glazed. Serve immediately.

Notes

  • Prep all ingredients before cooking to ensure smooth and quick cooking.
  • Do not overcrowd the pan; cook chicken in batches if needed for proper browning.
  • Use fresh minced garlic for the most vibrant flavor.
  • Adjust sauce thickness with cornstarch slurry as needed.
  • Cook vegetables on high heat to keep them crisp and bright.
  • Customize the recipe by adding spices, swapping vegetables, or replacing chicken with tofu or tempeh for vegetarian options.
