Instructions

  1. Prepare the Tart Crust: Combine the all-purpose flour and cold unsalted butter in a food processor or by hand until the mixture resembles coarse crumbs. Gradually add cold water until the dough comes together smoothly. Press the dough evenly into a tart pan and chill for at least 30 minutes to ensure a flaky, crisp crust when baked.
  2. Toast the Walnuts: While the crust chills, toast the walnuts in a dry skillet over medium heat for about 5 minutes, stirring frequently until fragrant and golden. This step enhances their natural oils and deepens their flavor.
  3. Make the Honey Filling: In a saucepan, warm the honey, brown sugar, and heavy cream over low heat until the sugar fully dissolves. Remove from heat and whisk in the room temperature eggs and vanilla extract until you have a smooth, velvety mixture ready to be poured into the tart shell.
  4. Assemble and Bake: Spread the toasted walnuts evenly over the chilled tart crust. Carefully pour the honey filling on top of the walnuts. Bake in a preheated oven at 350°F (175°C) for 35-40 minutes, or until the filling is set and golden brown around the edges.
