  • 1/2 cup mustard oil (or Nilgiri oil; sunflower or olive oil for vegan-friendly alternative)

Instructions

  1. Prepare the Limes: Wash and dry the limes thoroughly to prevent moisture that could spoil the pickle. Cut the limes into small wedges or chunks and remove all seeds carefully to avoid bitterness.
  2. Add Salt and Sun-Dry: In a glass jar, toss lime pieces with salt. Seal the jar loosely and place it under direct sunlight for several days, shaking gently each day to mix. This softens the limes and infuses them with saltiness.
  3. Roast and Grind Spices: Dry roast mustard seeds, fenugreek seeds, and asafoetida until fragrant. Once cooled, grind them coarsely to form the pickle’s spice base.
  4. Combine Ingredients: Mix the sun-dried limes with turmeric powder, red chili powder, and the freshly ground spice mix. Stir well to evenly coat the lime pieces with the spices.
  5. Add Oil and Cure: Heat mustard oil until it reaches smoking point to neutralize its sharpness, then let it cool slightly. Pour the warm oil over the lime and spice mixture, ensuring all pieces are submerged. Seal the jar and let the pickle mature in a cool, dark place for at least 2 weeks before consuming.
