Instructions

  1. Prepare the Ingredients: Dice the bell peppers, celery, and onions, slice the sausage into bite-sized pieces, and cut the chicken thighs into chunks for easy cooking and serving.
  2. Sauté the Aromatics and Meats: Set the Instant Pot to sauté mode. Heat olive oil, add chicken pieces and brown lightly on all sides, then remove and set aside. Next, brown the sausage slices in the pot until they release flavorful oils.
  3. Cook the Vegetables: Add diced onions, bell peppers, celery, and garlic to the pot and sauté for 3-4 minutes until softened and fragrant, creating a savory base.
  4. Add Rice, Liquids, and Seasonings: Stir in the rice, diced tomatoes, chicken broth, Cajun seasoning, and bay leaves. Nestle the browned chicken and sausage back into the pot, ensuring rice is fully submerged.
