Ingredients

Scale

For the Patties

  • 1 lb ground beef (80/20 blend)
  • 1/4 cup stout beer
  • 1/4 cup finely chopped onions
  • Salt, to taste
  • Black pepper, to taste

Toppings and Buns

  • 4 slices cheddar cheese
  • 4 brioche buns
  • Mayonnaise, as needed
  • Mustard, as needed
  • Leafy lettuce, washed and dried
  • Tomato slices
  • Pickles
  • Butter, for toasting buns

Instructions

  1. Prepare the Patties: Combine ground beef with stout beer, salt, pepper, and finely chopped onions. Mix gently to keep the meat tender, then form into evenly sized patties about ¾-inch thick.
  2. Sear the Patties: Heat a skillet or grill pan over medium-high heat and add a small amount of oil. Place patties on the hot surface and cook for about 4 minutes per side, until golden brown crust forms and meat reaches preferred doneness.
  3. Melt the Cheese: About a minute before removing the patties from heat, place a slice of cheddar cheese on top and cover the pan to melt the cheese perfectly.
  4. Toast the Buns: Slice the brioche buns and lightly toast them in a buttered skillet until golden and slightly crisp for added flavor and texture.
  5. Assemble the Burger: Spread mayonnaise and mustard on bun halves. Layer fresh lettuce, tomato slices, the cheesy patty, and pickles. Top with the other bun half and serve immediately.

Notes

  • Use room temperature meat for even cooking and juicier patties.
  • Don’t overwork the meat to avoid tough burgers.
  • Press a small dimple in the center of each patty to prevent puffing up during cooking.
  • Let cooked patties rest a few minutes to lock in juices before serving.
  • Choose high-quality, fresh cheddar cheese for best flavor.
