Jalapeno Corn Coleslaw

Jalapeno Corn Coleslaw is a vibrant, zesty side dish that combines spicy jalapenos, sweet corn, and crunchy cabbage with a creamy, tangy dressing. Perfect for BBQs, picnics, or as a flavorful topping, this easy-to-make slaw delivers a bold explosion of flavor, fresh textures, and colorful appeal that pairs wonderfully with grilled and smoked meats.

Ingredients

Scale

Vegetables

  • 4 cups shredded cabbage (about half a medium head)
  • 1 cup fresh corn kernels (shucked from 1 ear, or thawed frozen corn)
  • 12 jalapenos, thinly sliced (seeds removed for less heat)
  • 1 medium carrot, grated or julienned (optional)
  • 1/4 cup fresh cilantro, chopped

Dressing

  • 1/2 cup mayonnaise
  • 2 tablespoons fresh lime juice
  • 1 tablespoon honey or sugar
  • Salt, to taste (about 1/2 teaspoon)
  • Freshly ground black pepper, to taste (about 1/4 teaspoon)

Instructions

  1. Prepare the Vegetables: Shred the cabbage finely for a perfect crunch. Thinly slice the jalapenos, removing seeds if you prefer less heat. Shuck the fresh corn and slice off the kernels, or use thawed frozen corn. Grate or julienne the carrot if using.
  2. Make the Dressing: In a separate bowl, combine the mayonnaise, fresh lime juice, honey or sugar, salt, and pepper. Whisk until smooth and creamy to create a tangy, balanced dressing.
  3. Combine and Toss: In a large bowl, add the shredded cabbage, corn kernels, jalapenos, carrots, and chopped cilantro. Pour the dressing over the ingredients and toss gently but thoroughly to evenly coat everything.
  4. Chill and Serve: Refrigerate the coleslaw for at least 30 minutes before serving. This resting time allows the flavors to meld and the cabbage to soften slightly, while maintaining a satisfying crunch.

Notes

  • Use fresh corn and jalapenos for the best flavor and texture.
  • Adjust jalapeno quantity and remove seeds to control spiciness.
  • Use sharp knives to finely slice vegetables to preserve crispness.
  • Chill the coleslaw to meld flavors, but avoid over-chilling to keep it crunchy.
  • If dressing is too thick, thin with a teaspoon of water or additional lime juice.
