Ingredients

Scale

Main Ingredients

  • 4 cups Jamaican Sweet Potatoes, peeled and cut into chunks
  • 1 cup coconut milk
  • 1 tablespoon fresh grated ginger
  • 1 teaspoon ground allspice (pimento)
  • 1/2 teaspoon ground nutmeg
  • 2 tablespoons brown sugar
  • 1/2 teaspoon sea salt

Instructions

  1. Prepare and Peel the Sweet Potatoes: Start by washing your Jamaican Sweet Potatoes thoroughly. Peel them using a vegetable peeler, then cut them into evenly sized chunks to ensure uniform cooking.
  2. Boil Sweet Potatoes Until Tender: Place the sweet potatoes in a pot of boiling water with a pinch of sea salt. Cook until they are soft enough to pierce easily with a fork, usually about 15 to 20 minutes.
  3. Add Coconut Milk and Spices: Drain the boiled sweet potatoes and return them to the pot. Pour in the coconut milk, then sprinkle in fresh grated ginger, allspice, nutmeg, and brown sugar. Stir gently to combine the ingredients evenly.
  4. Simmer to Blend Flavors: Lower the heat and simmer the mixture for 10 minutes to let the spices meld and the coconut milk infuse the sweet potatoes, stirring occasionally to prevent sticking.
  5. Mash or Serve As Is: Depending on your preference, you can lightly mash the mixture for a creamy texture or serve the sweet potato chunks whole with the spiced coconut sauce.

Notes

  • Choose Fresh Sweet Potatoes: Select firm and brightly colored Jamaican Sweet Potatoes for the best taste and texture.
  • Don’t Overcook: Overboiling can turn the sweet potatoes mushy, so watch closely for tenderness.
  • Spice It Up Gradually: Add spices bit by bit to adjust flavor intensity to your liking.
  • Use Fresh Ingredients: Fresh ginger and quality coconut milk make a significant difference in flavor brilliance.
  • Serve Warm: Jamaican Sweet Potatoes taste best when warm, which helps to bring out their creamy texture and aromatic spices.
