Ingredients

Scale

Main Ingredients

  • 3 large egg whites, room temperature
  • 3/4 cup granulated sugar
  • 12 tablespoons Jello flavored gelatin powder (choose your preferred flavor)
  • 1/4 teaspoon cream of tartar
  • 1/8 teaspoon salt (a pinch)
  • 1/2 teaspoon vanilla extract (optional)

Instructions

  1. Preheat and Prepare: Preheat your oven to 200°F (93°C). Line a baking sheet with parchment paper to prevent sticking and allow for easy cleanup.
  2. Whip the Egg Whites: In a clean, dry mixing bowl, whip the room-temperature egg whites with an electric mixer. Add cream of tartar and salt. Continue whipping until soft peaks form.
  3. Add Sugar and Jello Powder: Gradually add granulated sugar, one tablespoon at a time, whipping until stiff, glossy peaks form. Gently fold in the Jello powder and vanilla extract if using, careful not to deflate the meringue.
  4. Pipe or Dollop the Meringues: Transfer the meringue mixture to a piping bag fitted with a round or star tip. Pipe small dollops or decorative swirls about 1 inch apart onto the parchment-lined baking sheet.
  5. Bake Low and Slow: Bake at 200°F (93°C) for 90 minutes to 2 hours until the meringues are dry and crisp without browning. Turn off the oven and leave the meringues inside for an additional hour to fully set and cool.

Notes

  • Use room temperature eggs for better volume and stability.
  • Add sugar slowly to help it dissolve fully for glossy peaks.
  • Fold in Jello powder gently to maintain airiness and even flavor.
  • Bake at low temperature to preserve color and texture, preventing browning.
  • Store cookies in an airtight container away from humidity to maintain crispness.
