Instructions

  1. Prepare the White Chocolate Base: Chop the white chocolate into small pieces and gently melt it using a double boiler or microwave in short bursts, stirring frequently to avoid burning. This smooth melt forms the foundation of your truffles.
  2. Mix the Cream and Butter: In a small saucepan, gently heat the heavy cream and butter until just warm and fully combined. The warmth helps smooth out the butter and prepares the mixture for blending into the chocolate.
  3. Combine Cream Mixture with Chocolate: Slowly pour the warm cream and butter mixture over the melted white chocolate. Stir continuously until the mixture is perfectly smooth and glossy.
  4. Add Key Lime Juice and Powdered Sugar: Stir in freshly squeezed key lime juice and sifted powdered sugar. Continue mixing to create a thick, creamy truffle filling that balances sweetness with tartness.
