Ingredients

Scale

Beef and Marinade

  • 1 pound thinly sliced lean beef (ribeye or sirloin recommended)
  • 1/4 cup soy sauce (use low-sodium for a low-sodium option)
  • 2 tablespoons brown sugar
  • 3 cloves garlic, minced
  • 1/4 cup grated Asian pear or apple (substitute kiwi or pineapple if needed)
  • 1 teaspoon sesame oil
  • 1/4 teaspoon black pepper
  • 1 tablespoon gochujang (optional, for spiciness)

Finishing and Garnishes

  • 2 green onions, sliced
  • 1 teaspoon sesame seeds, toasted

Instructions

  1. Prepare the Marinade: In a medium bowl, combine the soy sauce, brown sugar, minced garlic, grated Asian pear, sesame oil, black pepper, and optional gochujang. Whisk together until the sugar is fully dissolved and the mixture is well blended.
  2. Marinate the Beef: Add the thinly sliced beef to the marinade, making sure every piece is evenly coated. Cover and refrigerate for at least 30 minutes, up to 2 hours for deeper flavor and tenderness.
  3. Cook the Beef: Heat a large skillet or grill pan over medium-high heat. Add the marinated beef in a single layer, cooking in batches if necessary to avoid overcrowding. Sear each side for 2-3 minutes until the beef is browned and cooked through.
  4. Add Green Onions and Finish: During the last minute of cooking, toss in the sliced green onions to soften slightly and add freshness. Remove from heat and sprinkle with toasted sesame seeds before serving.

Notes

  • Use thinly sliced ribeye or sirloin for the best tenderness and flavor.
  • Marinate the beef for at least 30 minutes but avoid marinating longer than 2 hours to prevent mushiness.
  • Cook on high heat to quickly caramelize the beef and lock in juices.
  • Do not overcrowd the pan; cook in batches for an even sear.
  • Garnish with fresh green onions and sesame seeds for added texture and flavor.
  • Substitute soy sauce with tamari or coconut aminos for a gluten-free option.
  • Add vegetables like julienned carrots, onions, or bell peppers for extra color and nutrition.
  • For vegetarian variation, replace beef with thinly sliced shiitake mushrooms or tempeh.
