Lazy Lasagna

Lazy Lasagna

Lazy Lasagna is a quick and easy weeknight meal that combines the comfort of classic lasagna with minimal prep and ingredients. Ready in under 30 minutes, it uses no-boil noodles and pantry staples to deliver a cheesy, saucy, and flavorful dish with minimal cleanup, perfect for busy families or anyone craving Italian comfort food without the fuss.

Ingredients

Scale

Proteins

  • 1 lb ground meat or plant-based protein

Cheese Mixture

  • 1 cup ricotta cheese
  • 1 large egg, beaten
  • 2 tablespoons chopped parsley
  • Salt and pepper to taste

Sauce and Vegetables

  • 2 cups marinara sauce
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 teaspoon Italian herbs (oregano, basil, parsley)
  • 1 tablespoon olive oil

Pasta and Cheese Toppings

  • 9 no-boil lasagna noodles
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Prepare Your Ingredients: Brown the ground meat or plant-based protein in a skillet with olive oil, garlic, and onion until cooked through and fragrant. Stir in marinara sauce and Italian herbs to create a flavorful sauce base.
  2. Mix the Cheese Filling: In a bowl, combine ricotta cheese with the beaten egg, chopped parsley, salt, and pepper. This cheese mixture adds creaminess and helps bind the lasagna layers together.
  3. Assemble Your Dish: In a baking dish, spread a thin layer of the meat sauce. Layer no-boil noodles over the sauce, then add a generous spoonful of the ricotta mixture. Sprinkle mozzarella and Parmesan cheeses on top. Repeat these layers until all ingredients are used, finishing with extra cheese on top.
  4. Bake Until Bubbly: Cover the dish with foil and bake in a preheated oven at 375°F (190°C) for about 25 minutes. Remove the foil for the last 10 minutes of baking to allow the cheese to brown and bubble beautifully.
  5. Rest and Serve: Let the lasagna rest for 10 minutes after baking to set up for easier slicing and to allow flavors to meld perfectly.

Notes

  • Use no-boil lasagna noodles to save time and ensure perfect layering without pre-cooking.
  • Reserve a little sauce liquid to add if noodles seem dry before baking to keep the lasagna moist.
  • Allow the lasagna to rest after baking for clean, sturdy slices.
  • Fresh herbs like basil or parsley brighten the flavor significantly compared to dried herbs.
  • Covering with foil initially prevents the cheese from burning while the inside cooks thoroughly.
