Instructions

  1. Prepare the Filling: Melt the butter in a large skillet over medium heat. Add the chopped mixed vegetables and cook until slightly tender. Sprinkle flour over the vegetables and stir constantly for 2 minutes to cook out the raw flour taste and form a roux base for thickening.
  2. Create the Cream Sauce: Gradually pour in the chicken or turkey broth and milk while whisking continuously to avoid lumps. Cook until the mixture thickens to a creamy consistency. Season with salt, black pepper, thyme, and garlic powder to infuse fragrant flavor.
  3. Combine Turkey and Filling: Fold in the chopped leftover turkey and mix until evenly coated. Let the filling simmer for 1 minute to heat through and blend flavors.
  4. Assemble the Pot Pie: Roll out one pie crust into a baking dish and fill with the turkey mixture. Cover with the second pie crust, trim any excess dough, and crimp the edges to seal. Cut small slits on top of the crust to allow steam to escape during baking.
