Ingredients

Scale

Main Ingredients

  • 1 cup Medjool Dates, pitted
  • 1 cup Raw Cashews
  • Zest of 1 fresh Lemon
  • 2 tablespoons fresh Lemon Juice
  • 1 teaspoon Ground Turmeric
  • 1 tablespoon Chia Seeds
  • 12 tablespoons Raw Honey or Maple Syrup

Optional Coating

  • Desiccated Coconut (for rolling energy balls)
  • Extra Turmeric Powder (alternative coating)

Instructions

  1. Prep Your Ingredients: Zest one fresh lemon and juice it to capture vibrant citrus flavor. Pit the medjool dates and optionally lightly toast the cashews for a deeper, nuttier taste.
  2. Blend the Base: Combine medjool dates and raw cashews in a food processor. Pulse until a coarse but sticky mixture forms, which will serve as the chewy foundation for your energy balls.
  3. Add Flavor and Superfoods: Add lemon zest, lemon juice, ground turmeric, chia seeds, and honey or maple syrup to the mixture. Pulse again until ingredients are well combined but the mixture remains slightly textured.
  4. Roll into Balls: Using your hands, roll the mixture into bite-sized balls about one inch in diameter. If too sticky, lightly wet your hands to help shape the balls.
  5. Optional Coating: Roll each ball in desiccated coconut or sprinkle with extra turmeric powder for a flavorful finish. Place the balls on a baking sheet or plate.
  6. Chill and Set: Refrigerate the energy balls for at least 30 minutes to firm up and allow flavors to meld, making them perfect for on-the-go snacking.

Notes

  • Don’t over-process the mixture to maintain a chewy texture instead of a paste.
  • Use fresh lemon zest and juice for the best flavor, avoiding bitterness from pre-packaged lemon flavorings.
  • If mixture feels dry, add a teaspoon of water or extra lemon juice a little at a time to help bind.
  • Taste mixture before rolling and adjust sweetness with more dates or sweetener if needed.
  • Store energy balls refrigerated to keep freshness and texture; best enjoyed chilled.
