Pasta & Cheese Sauce

  • 2 cups elbow macaroni
  • 4 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 2 ½ cups whole milk
  • 3 cups shredded sharp cheddar cheese
  • Salt, to taste
  • Black pepper, to taste
  • 2 tablespoons finely chopped onion
  • 1 tablespoon mixed fresh herbs (such as parsley, chives)

Stuffing

  • 2 cups stuffing mix

Instructions

  1. Cook the pasta: Boil the elbow macaroni in salted water until just al dente. Drain and set aside to cool slightly while you prepare the cheese sauce.
  2. Prepare the cheese sauce: Melt butter in a saucepan over medium heat. Whisk in the flour and cook for about 1-2 minutes to form a roux. Gradually add milk, whisking constantly until the sauce thickens. Remove from heat and stir in the shredded sharp cheddar cheese until melted and smooth.
  3. Combine pasta and sauce: Mix the cooked macaroni into the cheese sauce until all noodles are thoroughly coated. Season with salt, pepper, finely chopped onion, and herbs to add depth of flavor.
  4. Assemble the bake: Grease a baking dish. Pour half of the cheesy macaroni mixture into the dish, then sprinkle half of the stuffing mix evenly on top. Repeat with the remaining macaroni mixture and stuffing to create two layers.
  5. Bake until golden: Preheat the oven to 350°F (175°C). Bake the assembled dish for about 25-30 minutes, until the top is crisp and golden brown.
