Stuffing

  • 2 cups fresh spinach (or 1 cup frozen, thawed and drained)
  • 2 cloves garlic, minced
  • 1/2 cup crumbled feta cheese
  • 1/3 cup chopped sun-dried tomatoes
  • 1 teaspoon dried oregano or 1 tablespoon fresh oregano, chopped
  • 1 teaspoon dried basil or 1 tablespoon fresh basil, chopped
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare the Filling: Sauté minced garlic and spinach in olive oil over medium heat until the spinach is wilted and garlic is fragrant. Remove from heat and stir in crumbled feta cheese, chopped sun-dried tomatoes, oregano, basil, salt, and pepper until well combined.
  2. Prepare the Chicken Breasts: Using a sharp knife, carefully slice a pocket into each chicken breast without cutting through completely. Season both the inside and outside of each chicken breast with salt, pepper, and a pinch of dried oregano.
  3. Stuff the Chicken: Generously fill each chicken breast pocket with the spinach, feta, and sun-dried tomato mixture. Press the edges together carefully to seal the filling inside. Use toothpicks to secure if needed.
  4. Cook the Chicken: Heat olive oil in a skillet over medium heat. Sear the stuffed chicken breasts for about 3-4 minutes on each side until golden brown. Transfer the skillet or the chicken breasts to a preheated oven at 375°F (190°C) and bake for 15-20 minutes until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  5. Rest and Serve: Remove the chicken from the oven and let it rest for a few minutes to retain its juices. Remove toothpicks before serving. Garnish with extra crumbled feta and chopped fresh parsley or basil if desired.

  • Use a sharp knife to create neat pockets in the chicken for easier stuffing and even cooking.
