Instructions

  1. Prepare the shrimp: Peel and devein the fresh shrimp, then pat dry thoroughly with paper towels to ensure proper searing. If using frozen shrimp, thaw completely and drain any excess water to avoid sogginess.
  2. Sauté the garlic: Heat olive oil in a skillet over medium heat. Add the minced garlic and cook for 30 to 45 seconds until fragrant and slightly golden, being careful not to burn it as burnt garlic tastes bitter.
  3. Cook the shrimp: Increase the heat to medium-high. Add the shrimp to the skillet, then season with chili powder or paprika, salt, and pepper. Sear the shrimp for about 2 minutes on each side until they turn opaque and develop a slight caramelized crust.
  4. Add lime and finish: Squeeze fresh lime juice over the cooked shrimp and toss well to coat evenly. Remove from heat and sprinkle generously with chopped cilantro for a burst of fresh flavor and vibrant color.
