Ingredients

Scale

Main Ingredients

  • 10 cups air-popped popcorn
  • 1 cup creamy peanut butter
  • 1 cup chocolate chips (semi-sweet or milk chocolate)
  • 1/4 cup butter
  • 1 to 1 1/2 cups powdered sugar
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. Pop Your Popcorn: Start by popping about 10 cups of plain, air-popped popcorn. Ensure there are very few un-popped kernels, then set the popcorn aside in a large mixing bowl.
  2. Prepare the Chocolate-Peanut Butter Mixture: In a microwave-safe bowl, combine 1 cup of peanut butter, 1 cup of chocolate chips, and 1/4 cup of butter. Microwave in 20-second intervals, stirring after each, until smooth and fully combined. For extra flavor, stir in 1 teaspoon of vanilla extract.
  3. Coat the Popcorn: Pour the melted chocolate and peanut butter mixture over the popcorn. Use a spatula or wooden spoon to gently fold and coat all the popcorn evenly without crushing it.
  4. Add the Powdered Sugar: Transfer the coated popcorn into a large resealable plastic bag or a big bowl. Sprinkle 1 to 1 1/2 cups of powdered sugar over the popcorn and shake or toss until every piece is covered with the sweet coating.
  5. Let It Set: Spread the Muddy Buddy Popcorn onto a parchment-lined baking sheet and allow it to cool and set at room temperature for about 30 minutes. This ensures the coating hardens and each piece stays crunchy.
