Base Layer Ingredients

Custard Filling Ingredients

  • 2 large egg yolks
  • 2 tablespoons vanilla custard powder or instant vanilla pudding mix
  • 2 tablespoons granulated sugar
  • 1/2 cup milk, warmed
  • 1/4 cup unsalted butter, softened

Chocolate Topping Ingredients

  • 4 ounces semisweet or dark chocolate, chopped
  • 1 tablespoon heavy cream (optional)

Instructions

  1. Prepare the Base Layer: In a mixing bowl, combine 1 1/2 cups graham cracker crumbs, 1/3 cup cocoa powder, 1/2 cup shredded coconut, 1/2 cup chopped nuts, 1/2 cup granulated sugar, and 1/2 cup melted butter. Stir until the mixture is evenly moistened. Press this firmly and evenly into the bottom of a lined square pan (about 8×8 inches) to form a sturdy crust. Chill in the refrigerator to set while you prepare the next layer.
  2. Make the Custard Filling: In a saucepan, whisk together 2 egg yolks, 2 tablespoons vanilla custard powder, and 2 tablespoons sugar until smooth. Gradually add 1/2 cup warmed milk, whisking constantly to combine. Cook over low heat, stirring continuously until the mixture thickens to a custard-like consistency. Remove from heat and let cool slightly. Beat in 1/4 cup softened butter until smooth and creamy. Spread this custard evenly over the chilled base layer.
  3. Create the Chocolate Topping: Melt 4 ounces chopped semisweet or dark chocolate with 1 tablespoon heavy cream (optional) using a double boiler or microwave, stirring until glossy and smooth. Pour the chocolate mixture over the custard layer and spread evenly with a spatula. Return the pan to the refrigerator to chill until the chocolate is firm.
  4. Chill and Slice: Refrigerate the assembled bars for at least two hours to set properly. Before slicing, warm a sharp knife in hot water, wipe dry, and cut into squares for clean edges. Serve chilled for the best texture and flavor.
