Ingredients

Scale

Pie Crust

  • 1 pre-made or homemade flaky pie crust (for 9-inch pie)

Custard Filling

  • 3 large eggs
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 1/2 cups whole milk or cream
  • 1 cup sweetened shredded coconut
  • 3 tablespoons butter, melted

Instructions

  1. Prepare the Pie Crust: Fit your pie crust into a 9-inch pie dish. Lightly prick the bottom of the crust with a fork to prevent bubbling during baking. Chill the crust in the refrigerator while you prepare the filling.
  2. Mix the Custard Filling: In a mixing bowl, whisk together the eggs, sugar, vanilla extract, and salt until well combined. Gradually add the milk or cream while stirring continuously to ensure a smooth mixture without lumps.
  3. Add Coconut and Butter: Fold the sweetened shredded coconut and melted butter into the custard mixture, making sure the coconut is evenly distributed throughout.
  4. Pour Filling Into Crust: Carefully pour the custard filling into the chilled pie crust, spreading it evenly and smoothing the top with a spatula.
  5. Bake the Pie: Bake in a preheated oven at 350°F (175°C) for 50 to 60 minutes, or until the filling is set and slightly jiggly in the center. Remove from the oven and allow the pie to cool completely at room temperature before refrigerating.

Notes

  • Use freshly shredded coconut if available for better texture and flavor.
  • Do not overbake to avoid a rubbery custard; the center should have a slight wobble.
  • Cool the pie slowly at room temperature before refrigerating to prevent cracking and maintain creaminess.
  • Use high-quality butter for a richer and more flavorful filling.
  • Optionally, blind bake your pie crust slightly to keep it crisp and prevent sogginess.
