Ingredients

Scale

Main Ingredients

  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 8 ounces fettuccine pasta (uncooked)
  • 3 garlic cloves, minced
  • 3 tablespoons butter
  • 1 ½ cups heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cups chicken broth
  • Salt and pepper, to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Prepare the Chicken: Cut the chicken breasts into bite-sized pieces and season with salt and pepper. Heat a large pot or deep skillet over medium heat and add butter. Once melted, add chicken pieces and cook until golden brown and cooked through, about 5-7 minutes. Remove chicken and set aside.
  2. Sauté Garlic and Add Liquids: In the same pot, add more butter if needed and sauté minced garlic until fragrant, about 30 seconds to 1 minute. Pour in chicken broth and heavy cream, stir to combine, and bring it to a simmer.
  3. Cook the Pasta: Add uncooked fettuccine to the simmering liquid, ensuring noodles are submerged. Cook uncovered, stirring occasionally, until pasta is tender and liquid mostly absorbed, about 12-15 minutes.
  4. Finish the Sauce and Combine: Reduce heat to low and stir in grated Parmesan cheese until sauce thickens and becomes creamy. Return cooked chicken to pot and toss to coat evenly. Adjust seasoning with salt and pepper.
  5. Garnish and Serve: Sprinkle freshly chopped parsley over the pasta for color and freshness. Serve immediately.

Notes

  • Use freshly grated Parmesan cheese for the best flavor and smooth melting.
  • Watch the pasta closely while cooking to avoid overcooking; it should be perfectly al dente.
  • Sauté garlic carefully to avoid burning and maintain flavor.
  • Finish the sauce on low heat to prevent curdling and promote creaminess.
  • If sauce seems too thick, add a splash of reserved pasta water to smooth it out.
