Ingredients

Scale

Proteins

  • 500g ground lamb

Vegetables & Aromatics

  • 150g fresh spinach (or frozen)
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 medium tomatoes, chopped or 2 tbsp tomato paste

Grains & Liquids

  • 1 cup long-grain rice
  • 2 cups chicken or lamb broth

Spices

  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1/4 tsp ground cinnamon
  • Salt and freshly ground black pepper, to taste

Oils & Others

  • 2 tbsp olive oil

Instructions

  1. Prepare Your Ingredients: Finely chop the onion and garlic, wash the spinach if fresh, and measure out the rice and broth. Having all ingredients ready ensures a smooth cooking process.
  2. Brown the Lamb: Heat olive oil in a heavy-bottomed pot over medium heat. Add ground lamb and cook until browned and crumbly, releasing its rich aroma. Drain excess fat if necessary.
  3. Sauté Aromatics: Add the chopped onion and garlic to the pot with the lamb. Sauté for 3-4 minutes until softened and fragrant, allowing the flavors to meld.
  4. Add Spices and Tomato: Sprinkle in cumin, paprika, and cinnamon, then stir in tomato paste or chopped tomatoes. Cook for 2 minutes to deepen the flavors.
  5. Add Rice and Broth: Pour in the rice and broth, stirring well to evenly distribute ingredients. Bring the mixture to a gentle boil.
  6. Incorporate Spinach and Simmer: Reduce heat to low and fold in the spinach gently. Cover and simmer for 15-20 minutes until rice is tender and liquid is absorbed.
  7. Final Touch and Rest: Turn off the heat and let the pot rest, covered, for 5 minutes to allow the flavors to settle and the rice to fluff perfectly.

Notes

  • Use fresh spinach and lamb for best texture and flavor.
  • Don’t skip browning the lamb to build richer flavor and texture.
  • Resting the dish covered before serving helps the rice absorb moisture evenly.
  • Adjust broth quantity slightly for firmer or softer rice based on preference.
  • A heavy-bottomed pot prevents sticking and ensures even heat distribution.
