Ingredients

Scale

Dry Ingredients

  • 1 ¾ cups all-purpose flour
  • 2 teaspoons baking powder
  • ¾ cup granulated sugar
  • ½ teaspoon salt

Wet Ingredients

  • 1 large egg
  • ½ cup fresh orange juice
  • 1 tablespoon orange zest
  • ½ cup vegetable oil
  • ½ cup milk
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare Your Ingredients: Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or lightly grease the cups. In a small bowl, combine the dry ingredients for even distribution.
  2. Mix Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, baking powder, granulated sugar, and salt to ensure the muffins rise well and are evenly sweetened.
  3. Combine Wet Ingredients: In another bowl, whisk the egg, vegetable oil, fresh orange juice, orange zest, milk, and vanilla extract until fully blended to add moisture and citrus flavor.
  4. Blend Wet and Dry Components: Gently fold the wet ingredients into the dry mixture with a spatula or wooden spoon. Stir just until the flour disappears to keep muffins light and fluffy. Avoid overmixing.
  5. Fill Muffin Cups and Bake: Spoon the batter evenly into the prepared muffin tin, filling each cup about two-thirds full. Bake for 18-22 minutes or until a toothpick inserted into the center comes out clean. Allow muffins to cool for a few minutes before removing them from the pan.

Notes

  • Use fresh oranges for the most vibrant flavor and moisture.
  • Measure flour using the spoon-and-level method to avoid dense muffins.
  • Do not overmix the batter to keep muffins tender.
  • Ensure accurate oven temperature for even baking and golden crust.
  • Let muffins cool slightly (about 5 minutes) before removing from pan to prevent sticking.
