Instructions

  1. Prepare the Potatoes: Scrub the russet potatoes clean and pat dry. Pierce each potato several times with a fork. Rub the potatoes with olive oil and sprinkle with salt. Bake at 400°F (200°C) for 45-60 minutes until skins are crisp and the insides are tender.
  2. Scoop and Season: When cool enough to handle, slice potatoes lengthwise. Carefully scoop out most of the fluffy potato flesh, leaving a thin layer to keep the skins sturdy. Lightly brush the skins with olive oil and sprinkle generously with salt and pepper.
  3. Add Cheese and Bacon: Fill the hollowed potato skins with shredded cheddar cheese and sprinkle crispy cooked bacon bits on top. Arrange on a baking sheet lined with parchment paper.
  4. Bake Until Melty: Bake at 425°F (220°C) for 10-15 minutes until cheese is bubbly and golden. Watch closely to prevent burning.
  5. Top and Serve: Remove from oven and garnish with chopped green onions and a dollop of sour cream. Serve immediately while warm and gooey.
