Instructions

  1. Prepare the Sausage: Cook the breakfast sausage over medium heat, breaking it into crumbles as it cooks, until browned and fully cooked. Drain any excess fat and set aside.
  2. Mix the Pancake Batter: In a large bowl, whisk together the pancake mix, eggs, and milk until smooth. If using cheese, stir it into the batter now for an even melt throughout the casserole. Season with salt and pepper to taste.
  3. Assemble the Casserole: Lightly grease your baking dish. Pour half of the pancake batter into the bottom of the dish, then sprinkle half of the cooked sausage evenly over the batter. Pour the remaining pancake batter on top, followed by the rest of the sausage.
  4. Bake to Perfection: Preheat the oven to 350°F (175°C). Bake the casserole for 30-35 minutes, or until the pancake is cooked through and golden on top. Check doneness by inserting a toothpick in the center; it should come out clean.
