This easy-to-make recipe uses traditional Passover-friendly ingredients and can be quickly prepared for seder meals or casual gatherings, bringing warmth and joy to the table while respecting dietary traditions.

Ingredients

Scale

Chicken

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

Coating

  • 1 cup matzah meal (or gluten-free matzah meal/almond meal for gluten-free option)
  • 2 large eggs
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Frying

  • Vegetable or canola oil, enough to cover bottom of pan by 1/4 inch

Optional Variations

  • 1 tsp fresh rosemary or thyme, chopped (for herb-infused nuggets)
  • Pinch of cayenne pepper or smoked paprika (for spicy kick)

Instructions

  1. Prepare the Chicken: Cut the chicken breasts into equal-sized bite-sized pieces to ensure even cooking. Pat them dry thoroughly with paper towels to help the coating stick better.
  2. Set Up Your Breading Station: Beat the eggs in one shallow dish until well blended. In a separate shallow bowl, mix the matzah meal with garlic powder, paprika, salt, pepper, and any optional herbs or spices you prefer.
  3. Coat the Chicken: Dip each chicken piece into the egg wash, letting the excess drip off, then dredge it into the seasoned matzah meal, pressing lightly so the coating adheres well.
  4. Heat the Oil: Pour vegetable or canola oil into a frying pan to cover the bottom by about 1/4 inch. Heat over medium heat until the oil shimmers but does not smoke.
  5. Fry the Nuggets: Carefully place coated chicken pieces into the hot oil in batches to avoid overcrowding. Fry each side for 3 to 4 minutes until golden brown and cooked through.
  6. Drain and Serve: Remove nuggets with a slotted spoon and place on a plate lined with paper towels to absorb excess oil before serving.

Notes

  • Pat dry the chicken thoroughly for better coating adhesion and crispier nuggets.
  • Do not overcrowd the pan while frying to maintain oil temperature and avoid soggy nuggets.
  • Maintain medium heat during frying to prevent burning or greasiness.
  • Use fresh matzah meal for the crispiest crust.
  • Let nuggets rest briefly before serving to allow the coating to firm up and flavors to settle.
