Ingredients

Scale

Wet Ingredients

  • 3 ripe bananas (with plenty of brown spots)
  • 1/2 cup natural peanut butter (creamy or chunky)
  • 1/4 cup melted butter or oil
  • 2 large eggs
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 1 3/4 cups all-purpose flour (or gluten-free flour blend for GF version)
  • 1 teaspoon baking soda
  • 3/4 cup sugar (or honey/maple syrup as natural sweetener alternative)
  • 1 pinch of salt

Instructions

  1. Preheat and Prepare: Preheat your oven to 350°F (175°C). Lightly grease a loaf pan or line it with parchment paper for easy removal.
  2. Mash the Bananas: In a large bowl, mash the ripe bananas until mostly smooth, leaving some lumps for texture and flavor.
  3. Mix Wet Ingredients: Add peanut butter, melted butter or oil, sugar, eggs, and vanilla extract to the mashed bananas. Stir until fully combined and smooth.
  4. Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, and salt to evenly distribute the leavening agent and seasoning.
  5. Blend Wet and Dry: Gradually fold the dry ingredients into the wet mixture. Be careful not to overmix; stop folding as soon as the flour disappears to keep the bread tender.
  6. Pour and Bake: Pour the batter into the prepared loaf pan. Bake for 50 to 60 minutes. Check doneness by inserting a toothpick in the center; it should come out mostly clean.
  7. Cool and Enjoy: Let the bread cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing to maintain texture.

Notes

  • Use overripe bananas with brown spots for maximum sweetness and moisture.
  • Don’t overmix the batter to keep the bread light and fluffy.
  • Choose natural peanut butter without added sugars or hydrogenated oils for best flavor.
  • Check the bread starting at 50 minutes to avoid overbaking, as oven temperatures vary.
  • Adding a pinch of salt balances the sweetness and enhances overall flavor.
