  • 1 cup bell peppers, chopped
  • 1 cup carrots, julienned or chopped
  • 1 cup snap peas or other preferred vegetables (e.g., broccoli, bok choy, zucchini noodles)

Finishing

  • 1 tbsp sesame oil
  • Salt and pepper to taste
  • Oil for cooking (vegetable or olive oil)
  • Chopped cilantro, sliced green onions, and crushed peanuts for garnish (optional)

Instructions

  1. Prepare the Noodles: Cook the rice or egg noodles according to the package instructions until they are al dente. Drain the noodles and toss them lightly with a small amount of oil to prevent sticking. Set aside.
  2. Cook the Chicken: Lightly season the sliced chicken breast with salt and pepper. Heat a splash of oil in a hot pan and sauté the chicken until golden and cooked through, about 5 to 7 minutes. Remove the chicken from the pan and set aside.
  3. Sauté the Aromatics and Vegetables: In the same pan, add the minced garlic and grated ginger. Fry briefly until fragrant. Add the chopped vegetables and stir-fry until they are crisp-tender, retaining their vibrant color and crunch.
  4. Make the Peanut Sauce: In a bowl, whisk together peanut butter, soy sauce, lime juice, honey or brown sugar, and chili flakes or sriracha if using. Gradually add warm water a little at a time to thin the sauce until it reaches a smooth, pourable consistency.
  5. Combine Everything: Return the cooked chicken to the pan with the vegetables. Pour in the peanut sauce and gently toss to coat everything evenly. Finally, add the cooked noodles and mix until every strand is coated with the sauce.
