Instructions

  1. Prepare the Dates: Carefully pit each Medjool date by making a small slit down one side and removing the pit to create space for the pistachios and chocolate coating.
  2. Fill Dates with Pistachios: Gently stuff each pitted date with 2 to 3 whole raw pistachios, ensuring a satisfying crunch inside the soft fruit.
  3. Melt the Chocolate: Using a double boiler or microwave-safe bowl, melt the dark chocolate together with a teaspoon of coconut oil if using, stirring regularly until smooth and glossy.
  4. Dip Dates in Chocolate: Using a fork or skewer, dip each stuffed date into the melted chocolate, fully coating it. Allow excess chocolate to drip back into the bowl for a neat finish.
  5. Set and Chill: Place the chocolate-covered dates on parchment paper or a cooling rack. Optionally, sprinkle a small pinch of sea salt on top. Refrigerate for at least 30 minutes, or until the chocolate hardens.
