Ingredients

Scale

Main Ingredients

  • 2 cups fresh broccoli florets (firm, bright green)
  • 2 medium-sized carrots, peeled and cut into sticks or rounds
  • 2 tablespoons olive oil
  • 2 garlic cloves, thinly sliced or minced
  • Salt, to taste
  • Black pepper, to taste

Optional Ingredients

  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon dried herbs or spices (rosemary, thyme, or paprika)

Instructions

  1. Preheat the Oven and Prepare Vegetables: Set your oven to 425°F (220°C). Wash the broccoli thoroughly and cut it into evenly sized florets. Peel the carrots and slice them into sticks or rounds of similar thickness to ensure even cooking.
  2. Toss with Olive Oil and Seasoning: In a large mixing bowl, combine the broccoli and carrots. Drizzle with olive oil, add garlic, salt, and pepper. Toss gently, making sure each piece is evenly coated for maximum flavor and roast potential.
  3. Arrange on a Baking Sheet: Spread the vegetables out in a single layer on a baking sheet lined with parchment paper or lightly oiled to prevent sticking. Avoid overcrowding the pan to ensure the edges get crisp.
  4. Roast Until Tender and Caramelized: Place the baking sheet in the oven and roast for 20-25 minutes. About halfway through, gently stir or shake the veggies to promote even cooking and caramelization on all sides.
  5. Add Fresh Lemon Juice and Serve: Once the broccoli and carrots are tender with golden edges, remove from the oven and transfer to a serving dish. Finish with a squeeze of fresh lemon juice if desired and serve warm.

Notes

  • Slicing the vegetables into uniform sizes helps them cook evenly.
  • Roast at a high temperature (around 425°F/220°C) for crisp edges and tender centers.
  • Do not overcrowd the baking sheet to avoid steaming; spread veggies out in a single layer.
  • Using fresh garlic infuses a more vibrant flavor than garlic powder.
  • Experiment with fresh herbs like rosemary or thyme for extra aroma and flavor.
