Ingredients

Scale

Main Ingredients

  • 3 to 4 medium firm fresh onions (yellow, white, or sweet varieties)
  • 2 tablespoons good quality olive oil
  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper

Optional Herbs

  • 1 teaspoon fresh or dried thyme or rosemary

Optional Variations

  • 1 teaspoon brown sugar (for sweet and spicy variation)
  • ¼ teaspoon chili flakes (for sweet and spicy variation)
  • 2 to 3 garlic cloves, sliced (for garlic infused variation)
  • Vegan butter as a substitute for olive oil (for a creamy finish)
  • 1 to 2 tablespoons balsamic vinegar (to drizzle halfway through roasting)

Instructions

  1. Prep Your Onions: Peel the onions and slice them into even wedges or rings to ensure uniform cooking and caramelization without burning.
  2. Season and Oil: Place the sliced onions in a bowl. Drizzle with olive oil, then sprinkle with salt and freshly ground black pepper. Toss gently to evenly coat each piece.
  3. Arrange on a Baking Sheet: Spread the onion pieces in a single layer on a parchment-lined or lightly greased baking sheet, making sure not to overcrowd to allow crisping instead of steaming.
  4. Roast Until Golden: Preheat the oven to 425°F (220°C) and place the baking sheet inside. Roast the onions for 25 to 35 minutes, flipping once halfway through to promote even cooking, until edges are deep golden and centers are soft.
  5. Optional Herb Finish: In the last 5 minutes of roasting, sprinkle with fresh or dried herbs like thyme or rosemary so their fragrance infuses the onions before serving.

Notes

  • Cut onion pieces uniformly to ensure even cooking and prevent burning or undercooking.
  • Roast at a high temperature (425°F/220°C) for quick caramelization and crispy edges.
  • Do not skip the olive oil; it prevents dryness and enhances browning.
  • Use parchment paper on the baking sheet to prevent sticking and ease cleanup.
  • Allow roasted onions to rest for a few minutes after roasting to let flavors settle and cool slightly.
