Instructions

  1. Prepare and roast the vegetables: Preheat your oven to 450°F (230°C). Halve the tomatoes, peel and quarter the onion, and slice the peppers in half, removing seeds if you prefer less heat. Place all vegetables and garlic cloves on a baking sheet, drizzle with olive oil, sprinkle with a pinch of salt, and roast for 20-25 minutes, until charred spots appear and the vegetables soften, enhancing their natural flavors.
  2. Blend the ingredients: Allow the roasted vegetables to cool slightly, then transfer them to a blender or food processor. Add fresh garlic cloves (peeled after roasting), cilantro, lime juice, salt, and pepper. Pulse until combined, adjusting the texture to your liking—chunky for texture or smooth for dips.
  3. Taste and adjust: Sample the salsa and adjust seasoning with more salt, pepper, or lime juice as desired. Add finely chopped additional jalapeños for extra heat if preferred. Let the salsa rest for 10 minutes to allow flavors to meld before serving.
