Instructions

  1. Prepare and Roast the Vegetables: Preheat your oven to 400°F (200°C). Toss chopped vegetables with olive oil, salt, pepper, and fresh herbs. Spread evenly on a baking sheet and roast for 30-40 minutes, stirring halfway through until tender and caramelized.
  2. Sauté Garlic and Onions: While the vegetables roast, heat a bit of olive oil in a large pot over medium heat. Add finely chopped garlic and onions and sauté until soft and fragrant, about 5 minutes.
  3. Combine and Simmer: Transfer roasted vegetables to the pot with sautéed garlic and onions. Pour in vegetable broth, bring to a simmer, and cook gently for 10-15 minutes to meld flavors.
  4. Blend Until Smooth: Use an immersion or regular blender to purée the soup until creamy. Add extra broth or water if needed to reach desired consistency.
  5. Finish and Serve: Adjust seasoning with salt, pepper, and a splash of lemon juice or vinegar to brighten the flavor. Serve hot with optional garnishes.
