Instructions

  1. Prepare the Dough: Cream the softened unsalted butter with brown and granulated sugars until light and fluffy. Add the egg and vanilla extract, mixing well to combine completely. In a separate bowl, whisk together the all-purpose flour, baking soda, and a pinch of sea salt. Gradually add the dry ingredients to the wet mixture, stirring until just blended to avoid overmixing.
  2. Incorporate the Caramel: Chop caramel candies into small pieces or prepare thick caramel sauce. Gently fold most of the caramel pieces into the dough, reserving some to press onto each cookie later for gooey caramel pockets.
  3. Shape and Bake: Scoop dough onto a parchment-lined baking sheet, spacing cookies about two inches apart. Press a few extra caramel pieces onto the tops of each cookie and sprinkle lightly with sea salt flakes. Bake in a preheated oven at 350°F (175°C) for 10-12 minutes, until edges turn golden while centers remain soft.
  4. Cool and Enjoy: Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack. This rest period helps the cookies set and maintains the chewy texture.
