Instructions

  1. Prepare the Sausage: Cook the breakfast sausage in a skillet over medium heat, breaking it into small crumbles as it cooks. Once fully cooked, drain any excess grease and set aside to cool slightly.
  2. Mix the Batter: In a large bowl, combine the pancake mix, milk, egg, melted butter or oil, and baking powder if needed. Stir just until combined; avoid overmixing to keep the muffins tender.
  3. Add Sausage to Batter: Gently fold the cooked sausage crumbles into the pancake batter, ensuring even distribution without breaking the texture.
  4. Fill the Muffin Tin: Lightly grease a mini muffin tin and fill each cup about three-quarters full with the batter. This allows room for the muffins to rise and ensures the perfect mini size.
