Ingredients

Scale

Dough Ingredients

  • 2 ½ cups all-purpose flour (or whole wheat flour for a healthier version)
  • 2 ¼ tsp active dry yeast (or fresh yeast if available)
  • 1 cup warm milk
  • 2 eggs
  • 3 tbsp melted butter
  • 1 tsp salt
  • 1 tsp sugar (to activate yeast)

Filling Ingredients

  • 46 slices cooked bacon or sausage, chopped (or sautéed mushrooms/spinach for vegetarian)
  • 1 cup shredded cheese (cheddar, mozzarella, feta, or your choice)
  • 2 tbsp fresh herbs (parsley, chives, or paprika)
  • 1 small onion or 2 cloves garlic, sautéed (optional)
  • Salt and pepper to taste

Instructions

  1. Prepare the Dough: Combine warm milk with yeast and sugar, letting it sit until bubbly. Mix in flour, salt, eggs, and melted butter to form a soft dough. Knead for 8-10 minutes until smooth and elastic. Cover and let rise in a warm spot until doubled in size, about 1 to 1.5 hours.
  2. Prepare the Filling: Cook your filling ingredients while the dough rises. Fry bacon or sausage until crispy, sauté onions or garlic until fragrant, then mix with cheese and fresh herbs. Ensure filling is flavorful but not overly wet to prevent soggy rolls.
  3. Shape the Rolls: Punch down the dough to release air and roll it out on a floured surface into a rectangle. Evenly spread the filling across the dough, then roll it up like a jelly roll. Cut into equal portions and place on a lined baking sheet with space to expand.
  4. Final Rise and Bake: Let the shaped rolls rise again for 30 minutes until puffed. Preheat oven to 375°F (190°C). Brush rolls with egg wash for a shiny, golden crust. Bake for 20-25 minutes until golden brown and cooked through.

Notes

  • Use fresh yeast if available for best rise and texture.
  • Drain cooked fillings well to avoid soggy dough.
  • Don’t skip the second rise; it ensures soft, fluffy rolls.
  • Brushing with egg wash creates a beautiful glossy and golden crust.
  • Allow rolls to cool completely before storing to prevent condensation and sogginess.
